Continuing Education in Lincoln

HCC Lincoln offers a variety of classes for enrichment and professional development.

We also welcome suggestions on CE courses to offer!

Shown below are courses being offered for Fall 2019. 

Winter/Spring 2020 classes will be posted when registration is available. 

  • This hands-on workshop will teach you how to make flaky pie crust and tasty fruit pie filling.  Bill will share recipes for his pies that have won the "Grand Champion Pastry" award at the Illinois State Fair. Sample three different pie crusts (shortening, oil and lard-based) and master the crust of your choice.  Each student will work on his/her own pie and take it home for baking. 

    Cost includes all food supplies.  Please bring the following items with you: 
    •2 large mixing bowls   •liquid measuring cup      • 1 paring knife
    •1 9" pan   • dry measuring cups (1C and 1/4C)       
    • 1 large spoon for mixing dough  •rolling pin   
     • measuring spoons (1tbsp. and 1 tsp.)   • 1 large spoon or spatula for pie filling
    • 1 apron

    Time: 6:00 to 8:00PM
